Pallarès Solsona Knives

Pallarès kitchen knives are made in Catalonia, Spain. The family firm was set up in 1917 by two brothers, who were both knife smiths. Today the company is run by the third generation of the family. They produce superb knives of consistent quality using beautiful wood for the handles. Each knife is sharpened by hand.

I first bought these knives many years ago in the French Pyrenees and became such a fan that I began to import them to the Netherlands.

Many of the knives have a handle made of boxwood. Box is a hard, fine-grained wood, dense and strong. With their rounded tapering handles the Pallarès Solsona knives balance really comfortably in your hand.

Other Pallarès Solsona knives have handles crafted from ebony, rosewood (palissander) or olive wood.

Some of the knife blades are made from non-stainless carbon steel. The great advantage of this steel type is that it is very easy to sharpen with a sharpening steel or whetstone. A disadvantage is that it is liable to rust. So you should never leave it in water and always dry it off after use. Any rust marks can be removed with a hard scouring sponge.

Other Pallarès Solsona knives are made from stainless steel.

The advantage of stainless steel is that it never rusts or oxydises and stays sharp for relatively long. But a disadvantage is that it takes a little longer to sharpen.

Whatever the type of knife it's a good idea to have it professionally sharpened now and then. You can then maintain the sharp edge yourself and always have a sharp knife to hand! And needless to say - you should never put a Pallarès knife in your dishwasher.
